One thing I love about finding/making up new recipes with beans is that they offer a lot protein and fiber which helps to fill us up and they are so much cheaper and (I think) healthier than meat. Here is what we are eating for dinner this week!

Monday – Main: Spaghetti (I bought Ragu sauce for less than the price of a 6 oz can of tomato puree so not homemade sauce this time!). Side: Spinach salad with mushrooms, red onion and carrots.

Tuesday – Main: Stir-fry (I bought pineapples this weekend specifically for this stir-fry, I love pineapples in my stir-fry!)

Wednesday – Main: Chili Wraps. The chili will have Kidney beans, black beans, corn, diced tomatoes and onions in it. We’ll put the chili in a tortilla wrap and top them with cheese and sour cream.

Thursday – Main: Carrot and lentil soup Side: Homemade Rolls.

Friday – Main: Ranch Style Hash – this is my husbands favourite meal that his mom made. She uses ground beef but we’ll be using ground chicken. There will also be rice, tomatoes, onion and green bell pepper in it. Side: Salad.

Saturday- Veggie burgers and fries. My kids get excited about this meal!

Sunday – Spinach and mushroom quiche, mashed potatoes and steamed veggies.

    Sounds like some yummy meals! I made a mushroom and broccoli quiche yesterday which turned out pretty good. It was my Mexican roomate and her mexican friends first time eating quich. I also love pineapples in my stirfy as well .. ooooohhh .. I think I’ll make that tomorrow.
