Last year my husband and I were part of a community garden. We were able to pick a lot of green beans, peas, carrots, squash and pumpkin. We especially enjoyed making different dishes from the pumpkins. pumpkins are really quite delicious, we even pureed them and fed it to our daughter; she loved pumpkin too!

One of my favourite pumpkin recipes that I created was a pumpkin pie from scratch it is so easy and yummy! Here is the recipe:

Ingredients:

  • 2 Cups cooked and pureed pumpkin
  • 1 1/2 Cups evaporated milk
  • 2 eggs
  • 1/2 Cup brown sugar
  • 1/2 Cup white sugar
  • 1/2 teaspoon salt
  • 4 teaspoons pumpkin pie spice
  • 9 inch pie crust

Directions:

  1. Combine all ingredients except the pie crust, mix well.
  2. Pour into pie crust, bake at 425 degrees F for 15 minutes.
  3. Lower oven temperature to 350 degrees, bake an additional 45 minutes or until set.

Servings: 6-8

apple_hero.jpgOne thing that could make this recipe even easier is using a stand mixer. When it comes to using a hand held electric mixer I always seem to get food splatters on the countertops and myself. The Hamilton Beach® Stand Mixer has a splatter shield. My husband and I also make all of our own bread from scratch. The biggest mixing bowl we have is just big enough to hold all the ingredients for 2 loafs of bread. With the Eclectrics® Mixer’s 4.5 quart bowl we could make 4 loaves of bread at a time.  I love the innovative look and colours of the Hamilton Beach® Mixer. I would choose the apple colour (the one pictured). Which colour whould you choose?

Mmm, pumpkin pie sounds so good right now! I’ve never made it from scratch though, I prefer to just buy it premade lol.
